Prickly Pear Cactus Enchiladas

(Carrie) Tonight Charles and I tried a new restaurant, Mi Nidito. Many famous people have eaten there over the years: Bill Clinton, Sandra Day O'Connor, Lou Dobbs, Mike Weir, Kathy Griffin, and many others that I can't remember. One item on the menu is Prickly Pear Cactus Enchiladas. Only in Arizona will you find food made out of a cactus! I decided to give that a try and was pleasantly surprised. The prickly pear looked like and had the same texture as a cooked green pepper. The prickly pear didn't have a strong flavor, but with the enchilada sauce and cheese, this was a very tasty meal! There were people walking through the restaurant selling flowers, which we thought was different. We've never seen that before, but it sure added to the eclectic feel of the restaurant.
