We've discovered and re-discovered some delicious recipes that we want to share with you. These three recipes are quickly becoming our favorites!
Fruit Tacos
1 egg
1/3 cup sugar
1/4 cup butter, melted
1 1/2 tsp. vanilla
2/3 cup whole wheat flour
1/4 tsp. cinnamon
1/8 tsp. salt
1/3 cup milk
6 cups cut-up fresh fruit
Beat egg slightly. Add sugar, butter and vanilla. Mix well. Stir in flour, cinnamon and salt. Add milk. Stir until well blended.
Heat non-stick skillet to 350 degrees. Spoon small amount of batter onto hot skillet and quickly spread with back of spoon to a 5 inch circle. Cook until golden brown, about 1 to 3 minutes. Turn and cook the other side. Remove from skillet and immediatly fold into taco shell shape. Hold until set. The shell will harden quickly.
To serve, fill each shell with fruit. Delicious!!!
Chicken and Rice Enchiladas
1/3 cup sliced green onions
1 garlic clove, minced
3-4 cups shredded cooked chicken
1 TBSP chili powder
1 jar (16 oz) picante sauce or salsa
2 cups cooked long grain rice
1 can black beans, rinsed and drained
enchilada sauce
flour tortillas
cheese
In skillet, saute onions and garlic until tender. Stir in chicken, rice, beans, chili powder and picante sauce. Heat through.
Spoon 1/2 cup to 1 cup of filling on each tortilla. Fold sides and ends over filling and roll up. Arrange in a 13 x 9 baking pan. Pour enchilada sauce over top. Sprinkle cheese on top. Cover and bake at 375 degrees for 10 to 15 minutes or until heated through.
Honey Dijon Salmon
4 salmon fillets (4 oz each)
2 TBSP honey
2 TBSP Dijon mustard
1 TBSP olive oil
Black Pepper
In a small mixing bowl, combine the honey and Dijon mustard.
Add olive oil to a large non-stick skillet and place over medium heat. Place salmon in pan and season with pepper. Cook 4 minutes per side or until salmon is golden brown and cooked through.
After salmon is cooked, brush 1 TBSP honey mixture over each fillet. Let the honey mixture melt into the hot salmon and enjoy!

Those look like great recipes -- maybe I'll try that salmon for dinner tonight. And then the fruit tacos -- do you think using olive oil instead of butter would work? Is butter just for taste or is part of the texture thing too?
I am going to try the fruit tacos with dinner tonight because they look yummy and fun! I plan to cook some mahi mahi and I know the kids will run far and fast from fish. Maybe seeing the enjoyable taco will entice them to stay!
I would use the butter. I've cut back on the butter when I've made them and made up the difference with extra milk. I think the olive oil would give them a strange taste. The taco shells remind me of the flavor of churros.
Yummy recipes. I will definitely try them out.
Mmm ... Those fruit tacos sound delicious! We are going to have to try those soon.
