(Carrie) One of my coworkers gave me 2 grocery bags full of Lisbon Lemons freshly picked from her backyard tree. Lisbon lemons are small, but have a lot of juice and a thin skin, so there was quite a bit of lemon juice. I froze about 12 cups of juice! Charles and I zested and juiced the last bag of lemons last night and decided to have a "lemon party" to make it a fun occasion.
We had fresh lemonade to drink with our dinner and I made some delicious Fresh Lemon Cookies. We sure enjoyed eating and drinking our lemons! Here's the recipe for the cookies. Make sure you put on the frosting, as the frosting is what really makes the cookie.
Fresh Lemon Cookies
1 1/2 cups sugar
1 cup butter, softened
1 cup sour cream
2 eggs
4 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2/3 cup lemon juice
3 TBSP grated lemon peel
Frosting:
1/4 cup butter, melted
2 cups powdered sugar
1 TBSP grated lemon peel
2 to 3 TBSP lemon juice
1. Heat oven to 375. In large bowl, combine sugar and 1 cup butter; beat until light and fluffy. Add sour cream and eggs; blend well. Add all remaining cookie ingredients; mix well. Droup dough by rounded teaspoonfuls onto ungreased cookie sheets.
2. Bake at 375 for 10 - 12 minutes or until edges are light golden brown.
3. Meanwhile, in small bowl, combine all frosting ingredients, adding enough juice for desired spreading consistency. Frost warm cookies.
To make fresh orange cookies, substitute orange juice and orange peel for the lemon.

mmmmmm, lemon cookies! I am so envious of all that fresh lemon juice -- that is one major perk of living in the desert! Have you tried lemon chicken with fresh lemon juice? Sounds yummy Carrie and Charles!
Where are my lemons? I can eat them like oranges. You guys are lucky to have fresh lemons.
