Cheddar Potato Soup

(Carrie) Tonight we made some Cheddar Potato Soup that we considered blog worthy. Charles said it was soup you'd find in a gourmet restaurant! I love the soup because it is quick, easy, and very tasty. I got the recipe from a college roommate.

Cheddar Potato Soup

8 medium potatoes
1 onion
1 cup celery

Chop the potatoes (the smaller the better). Dice the onion and celery. Put all into a big pot and just barely cover the potatoes with water.

Boil the potatoes until soft. DO NOT drain the water. Mash the potatoes until they have the consistency of applesauce.

Add:
1 cup milk
4 cups cheddar cheese (we used 3 cups sharp cheddar and it tasted fine)
1 tsp salt
paprika to taste

Can also add other vegetables, chicken, etc.

Makes 8 servings
