Sunday Drive and Dinner

(Carrie) After church yesterday, Charles suggested we go on a drive to Gates Pass. I jumped at the chance to spend some time together and see a new part of Tucson. It was a beautiful drive. Supposedly Gates Pass is THE place to watch the sunset in Tucson. Charles and I will have to go back and watch the sunset some evening soon.






After our drive, we feasted on a new crockpot chicken recipe that Charles discovered. Our dinner was delicious, and took about 5 minutes to prepare! We thought you would like to have the recipe and try it for yourself.

Baja Bonanza Cilantro Chicken

2 pounds chicken breasts
1 14-ounce can chicken broth
1 lime, cut into wedges
1 handful chopped, fresh cilantro leaves
1 TBSP chopped garlic
1 tsp dry mustard
1 tsp ground cumin
1 tsp chili powder
1 tsp seasoned salt

Place chicken in bottom of slow cooker. Squeeze lime juice over the chicken. Discard all but 2 of the wedges; place those in with the chicken. Add remaining ingredients and stir. Simmer for approximately 4 hours (if chicken is thawed) or 8 hours (if using frozen chicken) on low heat. When chicken is done, take 2 forks and shred the chicken. Keep in the slow cooker and serve in natural juices over rice. Can also use in burritos, tacos, enchiladas.
